The water temperature for brewing tea?

Water temperature is important when making a cup of tea. To achieve the best tea flavor, alltimesteas.com recommends using fresh water from the tap in your kettle. (One should not reuse already boiled water, as the oxygen is gone, and it can result in less flavor in the tea)

If you have an electric kettle that can be set to a specific temperature, you can set it to 75-80 degrees Celsius. The water should not be boiling when poured over the tea. Boiling water can potentially damage the tea, as it might risk scorching and result in a bitter taste. Boiling water is typically 100 degrees Celsius, so if you have a kettle that cannot be adjusted for temperature, we would recommend waiting to pour the water over the tea until the temperature has dropped slightly.
